Chandra’s Salad
We are happy to welcome our dear friend and senior TriYoga teacher, Chandra, as she takes over Theresa’s classes for the next few weeks. In honor of her presence among the TYCP community, we are featuring her delicious grain salad. Enjoy!

These dishes are so versatile this time of year. All you need is some grain, vegetables, items for marinate and perhaps some dried herbs. Grain salads are simple to make and keep well at an outdoors picnic or in the fridge.
1. Start by making cooked grain. My favorite is quinoa or “Super Grains” (a blend of buckwheat, quinoa and millet, available from Food to Live), pictured in this photo. Once the grain has cooked, fluff it up a bit with a fork.
2. Then thinly slice some vegetables, such as summer squash, carrots, celery or fennel. Place in a bowl and add olive oil and lemon juice, some salt and dried herbs, if you like. Stir gently to coat, and let sit for an hour or so, to allow veggies to wilt a bit.
3. You may use only raw veggies or you may add cooked ones. I blanched the vegetables above: green beans and watermelon radish. Blanching allows the cooking process to be stopped, so the veggies remain crisp.
4. Once the grain has cooked, allow it to cool a bit before fluffing. Then add the vegetables and check seasoning. More salt, dried herbs or ground pepper may be added.
5. Sometimes I add reconstituted dried tomatoes. These hold up better than fresh tomatoes for adding to the salad and add a nice sweet taste. You could always add fresh tomatoes for a single serving.
6. And here is my lunch, greens salad is the base, then the grain salad is added. And as you can see, this day I included cooked sprouted lentils for protein.
7. All that is topped with micro greens and edible flowers. It was yummy!
